30-Minute Garlic Beef Stir-Fry Noodles

30-Minute Garlic Beef Stir-Fry Noodles

Quick skillet meals with big, bold flavors make weeknight cooking so much easier to manage. Thinly slicing sirloin steak and pairing it with tender pasta turns pantry staples into a satisfying, savory dinner in 30 minutes or less.

This dish pairs seared garlic beef with crisp vegetables and spaghetti in a glossy stir-fry sauce. Cooking the meal in stages keeps the meat tender and prevents the vegetables from going limp.

Why Searing in Batches Works

Sear the sliced steak in quick batches for one to two minutes per side so the pan stays hot. Removing the sautéed vegetables beforehand keeps them crisp while the meat browns properly.

After sautéing the fresh garlic and ginger, simmer the sauce and whisk in the cornstarch slurry over medium-low heat until it turns glossy. Tossing the spaghetti in the warm sauce for two to three minutes coats every strand before you return the beef and vegetables.

Key Ingredients for Flavor and Texture

Boneless sirloin steak stays juicy when sliced thin. Marinating the meat with soy sauce, olive oil, garlic powder, and cracked black pepper for 15 to 20 minutes infuses savory flavor into every strip before it touches the hot pan.

Standard spaghetti provides a sturdy noodle base that stands up well to high-heat tossing. Sliced red and yellow bell peppers, cremini mushrooms, and yellow onion add fresh texture and color.

The garlic stir-fry sauce blends broth, soy sauce, oyster sauce, brown sugar, rice vinegar, and toasted sesame oil. Dark soy sauce is optional and should only be stirred in if you want extra saltiness after tasting the sauce base.

Cook's Notes for Success

Cook your spaghetti shy of al dente and reserve about one cup of cooking water before draining. Because the noodles spend two to three minutes simmering in the skillet, taking them out of the pot slightly early keeps them firm.

Keep the reserved pasta water right beside your stove. If the sauce tightens too much as the noodles, meat, and vegetables finish cooking together, a quick splash of pasta water loosens the mixture easily.

Frequently Asked Questions

Can standard spaghetti really work in a stir-fry? Yes, spaghetti works well in this skillet meal. Boil the pasta slightly shy of al dente so it finishes cooking directly in the sauce without turning soft.

When should dark soy sauce be added? Dark soy sauce is an optional addition. Whisk your sauce ingredients together first and taste it, adding the dark soy sauce only if you want extra saltiness.

How do you keep the steak tender? Slice the sirloin thinly and sear in batches for only one to two minutes per side. Setting the beef aside and adding it back during the final two minutes prevents tough meat.

Ingredients

Beef Marinade
• 1–1¼ lb (450–565g) boneless sirloin steak, thinly sliced
• 1 tsp regular soy sauce
• 1 teaspoon (5ml) extra virgin olive oil
• ½ teaspoon garlic powder
• ½ teaspoon freshly cracked black pepper

Noodles & Vegetables
• 400–450g spaghetti
• ½ red bell pepper, thinly sliced
• 1 cup cremini mushrooms chopped
• ½ yellow bell pepper, thinly sliced
• 1-2 green onions chopped
• 1 medium yellow onion, thinly sliced
• 5 garlic cloves (15g), minced
• 1 tablespoon (15g) fresh ginger, grated (optional)
• 2–3 tablespoons (30–45ml) neutral oil, divided

Garlic Stir-Fry Sauce
• 1 cup (240ml) low-sodium beef or chicken broth
• 3 tablespoons (45ml) regular soy sauce
• 2 tablespoons (30ml) dark soy sauce (add only if you want more saltiness after taste testing the sauce)
• 1 tablespoon oyster sauce
• 2 tablespoons brown sugar
• 1 tablespoon (15ml) Shaoxing cooking wine (optional)
• 1 tbsp rice vinegar
• 1 teaspoon (5ml) toasted sesame oil
• 2 tsps cornstarch + 2 tbsps cold water or broth (added at the end- cornstarch slurry)
• ¼–½ cup (60–120ml) reserved pasta water, only if needed

Instructions
1. Toss beef with marinade ingredients; marinate 15–20 minutes.
2. Cook pasta to shy of al dente, reserve 1 cup pasta water, drain and set aside.
3. Whisk sauce ingredients together except for the cornstarch slurry.
4. Heat some oil in a large wok or deep skillet over medium-high heat. Cook the vegetables to your liking. Remove and set aside.
5. Add oil to same pan. Sear beef in batches, about 1–2 minutes only per side. Remove and set aside.
6. Reduce heat to medium. Add more oil, sauté garlic and ginger for 30–45 seconds. Pour in sauce, simmer 3–5 minutes. On medium low heat, add cornstarch slurry while stirring. Bring down to low heat. Should turn glossy.
7. Add spaghetti and toss for 2–3 minutes until glossy. Return beef and vegetables, add green onions, and toss 1–2 minutes until beef is cooked through. Loosen with reserved pasta water if needed.

Notes
• 2 tablespoons (30ml) dark soy sauce (add only if you want more saltiness after taste testing the sauce)
• Fresh ginger and Shaoxing wine are optional ingredients.
