Ingredients

1 1/2 pound ground beef

6 slices bacon, cooked and crumbled

30 ounce frozen shredded hash browns, thawed

2 cup shredded sharp cheddar cheese

1/2 cup finely chopped dill pickles

1 small yellow onion, finely diced

2 cloves garlic, minced

1 large egg

2 tablespoon melted butter

2 tablespoon ketchup

1 tablespoon yellow mustard

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

Instructions

Preheat your oven to 425°F and generously grease a muffin pan to prevent the cup from sticking.

Squeeze out as much moisture as possible from the thawed hash browns.

In a large mixing bowl, combine the thawed hash browns with the egg, melted butter, 1/2 cup of shredded cheddar cheese, garlic powder, and a pinch of salt. Mix well.

Using your hands, firmly press the potato mixture into the bottom and up the sides of each muffin cup, forming little potato shells.

Place the muffin pan in the preheated oven and bake for about 18–22 minutes, or until the edges are deep golden brown and crispy.

While the potato cup are baking, heat a skillet over medium-high heat, add the ground beef and diced onion, cooking until browned and the onions are tender.

Stir in minced garlic, Worcestershire sauce, ketchup, mustard, onion powder, smoked paprika, pepper, and a dash of salt. Cook for another 2–3 minutes to meld the flavors together.

Incorporate most of the crumbled bacon and finely chopped dill pickles into the beef mixture, saving a bit of bacon for topping.

Once the potato cup have baked and are golden, carefully spoon the cheeseburger filling into each crispy potato cup.

Top each potato cup generously with the remaining shredded cheddar cheese and crumbled bacon.

Return the muffin pan to the oven and bake for an additional 7–10 minutes, or until the cheese is bubbling and melted.

Once baked, allow the cup to rest for 5 minutes before gently removing them from the pan.
